What does fennel taste like. A Fennel bulb, which looks kind of like a cross between an onion and the base of a bunch of celery, has a sweet, perfumy, anise-like flavor. Rather than making food taste like licorice, though, fennel imparts a light, bright spring-like quality to foods. Plus, fennel is good for you.
Good way to eat Fennel. Cut a fresh fennel bulb into quarters or eighths, depending on size, toss with olive oil and vinegar, and roast on a baking sheet until tender (try 20 minutes at 400 for starters). Top with grated fresh parmesan and enjoy as a snack or a side dish.
